Fufu with meat soup
Fufu is a typical Ghanaian food. It consists of an homogeous mixture of plantain flour with water. It is eaten with soup normally a chicken soup. It very heavy and should be eaten for dinner although some people like to eat it for lunch.
MAIN INGREDIENTS:
2 Wooden spoon of farina, 1 or ½ Cup of fufu plantain flour 2-3 Cups of water.
Chicken soup Ingredients: Jumbo spices/ stock cubes (3 teaspoon), 1 teaspoon of salt 1-1½ Blended tin tomatoes (Optional: You can blend it the tomatoes with carrots), ½ Tomatoes paste/puree, ½ Garlic paste/puree/ 1 whole freshly chopped garlic, 1 Whole freshly chopped ginger 1½ Blended onion, 1 chopped meat cleaned and marinated with lemon, 1 Whole pepper 2-3 Cups of water.
Fried yam with tilapia
Tilapia is a grilled fish in a marinade of fresh ginger, chillies, with mustard and beef cubes, served with fried yams and a gravy. It is normally commendably spicy. The main characteristic of this fish is its huge size.
Yam is like potatoes. It can be fried of boiled according to what is served with. Yam is normally fried for less than 5 minute as if keep longer it can change the taste of it and make it more sour.
Jollof Rice
This is a popular West African dish. It consists of a mixture of rice, tomatoes stew and chicken or meat or vegetables. It can be serve for lunch or dinner. Its main characteristic is the rich of flavor especially when it is spicy at the right point,

MAIN INGREDIENTS FOR 4 ADULTS:
4 cups of rice, 8 pieces of Chicken thighs and drum sticks, 3 large onions, Pepper, garlic, ginger (amount optional) Chicken seasoning/ seasoning of choice, 2 cups mixed veggies, 1 can Tomato Plumps &Tomato puree, Salt to taste, Maggie cube (optional)
COOKING METHOD:
Using groundnut oil fry chopped onion, tomatoes and ground peppers. Then add basmati rice and stirred it to create a homogeneous mixture. The rice will change to a red colour when water is added. Jollof rice can be served with cooked meat, chicken, fish or vegetables.
